Strawberry Watermelon Chocolate Chip Bread Made With Juice

Like many families, we’ve been cooking and baking more since we’re spending a lot of time at home now. We find that making and sharing food together has been a great way to spend quality time together. But what should we make given it’s much harder to get groceries nowadays?

We looked at what we had on hand, such as pantry staples like flour, sugar, baking soda, salt, and chocolate chips (in a household with kids, these morsels are a staple!).  My daughter had an idea to make something that reminded her of summer since the weather is now warm.

“How about strawberries and watermelon?” she suggested. Great idea, but we didn’t have any fresh strawberries or watermelon in the house.

That’s when I recalled we did have a big 64 oz bottle of Juicy Juice 100% Juice in Strawberry Watermelon flavor. I always kept Juicy Juice in our house for the kids because it didn’t contain high fructose corn syrup or added sugar. We also had strawberries in the freezer. Was it possible to make bread using juice and frozen fruit?

We experimented, and it worked! The bread was very moist due to the juice and fruit (use frozen or fresh). The texture was a bit denser than say, banana bread, but it was still very tasty.

I would recommend adding the chocolate chips as a last step to the top of the batter in the loaf pan. If you mix them within the batter before pouring into the pan, they’ll sink to the bottom while baking (we made that mistake).

The combination of sweetness from the chocolate and fruit worked really well. Since we added frozen strawberries ,the bread took on a decisively more strawberry taste than watermelon. But overall it was delicious. I recommend eating it warm and within a day.

Strawberry Watermelon Chocolate Chip Bread Made With Juice

Cook Time 1 hour

Ingredients

  • 1/2 cup Juicy Juice 100% Juice Strawberry Watermelon flavor
  • 1 stick (1/2 cup) butter, softened
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen strawberries
  • 1/2 cup chocolate chips

Instructions

  1. Preheat over to 350°F.
  2. Grease a 9x5 inch loaf pan with oil or cooking spray.
  3. Cream butter and sugar in a large bowl until mixed.
  4. Add eggs and juice. Combine well.
  5. Add flour, baking powder, and salt. Mix well.
  6. Gently fold in strawberries.
  7. Pour batter into loaf pan. Sprinkle chocolate chips on the top.
  8. Bake for 1 hour. Let cool before removing from pan.

Notes

Bread will be moist due to the fruit and juice. Best eaten within a day.

If you don't have juice, you can replace it with 1 cup watermelon and/or strawberry puree. You can also use other juice flavors, such as Juicy Juice 100% Juice Apple, Berry, Cherry or Strawberry Kiwi.
