Soy Sauce Ice Cream Recipe

While at the BlogHer 2012 conference a few weeks ago, I was drawn to an offering of free soy sauce ice cream at the Kikkoman booth. It sounded intriguing, in a “Will it really be good?” way. Surprisingly, it was tasty with a flavor similar to salted caramel though not as sweet.
For those who want to try it at home, it’s super easy to make with only four ingredients and no special ice cream maker machines required. Here’s the recipe…enjoy!
SOY SAUCE ICE CREAM
- 3 eggs, separated
- tablespoons brown sugar, divided
- 3/4 cup heavy cream
- 1/2 teaspoon Kikkoman Soy Sauce
Set out 3 bowls. In the first bowl, place 3 egg whites and 2 tablespoons brown sugar. Whip egg whites with brown sugar until it peaks. In the second bowl, pour in heavy cream and 2 tablespoons brown sugar. Whip heavy cream and brown sugar until it peaks. In the third bowl, add 3 egg yolks, 1 tablespoon brown sugar, soy sauce and then stir to combine. Combine whipped egg whites to the whipped heavy cream, and then mix thoroughly with the egg yolk mixture. Freeze until firm in a freezer safe container.
