I love this Corn Tomato Salad with Lime recipe. It’s so fresh tasting and healthy. I’ve made it many times and guests always compliment its taste. This beautiful dish uses yellow, green, and red ingredients to create a visual delight. It’s a perfect side dish for barbeques, picnics, and everyday meals.

This recipe is also quick and easy to make. You likely already have most of the ingredients in your cupboards. There’s flexibility with the vinegar and lime components used. See below for more information.

Ingredient Notes

Vinegar – You can use either white wine vinegar or rice vinegar. White wine vinegar is fermented and oxidized white wine. This results in a light fruity flavor. Rice vinegar is an Asian cook’s staple made from rice. It offers a mild, sweet taste with a touch of zing. I use Marukan Seasoned Rice Vinegar which you can find in the Asian section of your grocery store, at an Asian specialty grocer, or on Amazon.

Lime – If using fresh lime juice, 2 tablespoons is equivalent to about 1 lime. If using Lime Essential Oil, make sure to use food-grade Lime essential oil. I use dōTERRA essential oils which is the brand trust, especially when cooking in recipes. Not all essential oils are food-grade for consumption and may even contain harmful synthetic fillers. So make sure you know where your oils are sourced from, and if they’ve been tested for purity.

Corn – I used canned corn for convenience, but you can also use fresh corn. If using fresh corn, you’ll need about 6 cups which is equivalent to about 8 ears of corn.

Corn Tomato Salad With Lime
Prep Time 20 minutes

Ingredients

  • 1/4 cup white wine vinegar or rice vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon honey
  • 2 tablespoons lime juice or 2 drops lime essential oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup extra virgin olive oil
  • 3 cans (15.25 oz) of corn
  • 2 pints cherry tomatoes, halved
  • 1 bunch scallions, thinly sliced
  • Chopped basil or chives (optional)

Instructions

  1. Mix vinegar, Dijon mustard, honey, lime juice or lime essential oil, salt, and pepper in a bowl with a whisk.
  2. Slowly whisk in the olive oil until well combined.
  3. In a large bowl, combine corn, tomatoes, and scallions. If using basil or chives, add them in. Combine all with dressing and mix well.
  4. Serve at room temperature or keep in refrigerator until ready to serve.
